Make Arancini with Leftover Rice - Tip of the Day

Got leftover rice? Here's an inventive way to use it.


Arancini are Italian treats of fried or baked rice balls coated in breadcrumbs.

Use 1 cup leftover cold risotto or cooked rice and add a beaten egg, some diced ham and fresh herbs. Roll into 2-inch balls, then roll in fresh or dried bread crumbs. Heat 1/4 inch oil in a heavy saucepan and fry rice balls until crispy. Serve with marinara sauce as an hors d'oeuvre, or on top of a salad.
