Ferran Adrià: A Spanish Beer that Actually Tastes Good

At El Bulli, Spanish chef Ferran Adrià became known for his chemistry-aided feats of culinary daring, creating dishes such as frozen foie-gras noodles, Parmesan "snow" and meat foam.

But lately, Adrià has undertaken his most challenging project to date: creating a Spanish beer that actually tastes good.

While Spain may excel at soccer, it lags behind in brewing: The lion's share of Spanish beers are light, easy-drinking lagers, the sort of hot-day brews that we buy in a 30-pack and bring to a backyard BBQ. Thirst-quenching quantity, not quality. In other words, beers that didn't do justice to Adrià's jaw-dropping foods.

To rectify the situation, Adrià and El Bulli sommeliers, along with Spanish brewers Damm, devised Inedit as an ideal dinner-table drink. Brewed with a blend of malt and wheat, Inedit is flavored with licorice, orange peel and coriander, which is the normal ingredient bill for a Belgian witbier. Furthermore, Inedit's profile -- faint fruit flavor, yeasty bouquet, subtle sweetness -- is surprisingly standard fare. Is it as paradigm-shifting as Adrià's eats? Not even close. It's drinkable, sure, but not worth a double-digit price tag -- or a seat at dinner.

Frankly, Adrià, after creating frozen chocolate air, I expect a bit more innovation. For that, I guess I must rely on American brewers like Dogfish Head.

As you state yourself in your article, he wasn't aiming for exciting, kitschy beer, he was trying to make a solid table beer - one that works well with a variety of foods. Your counter-example is very much the opposite. Dogfish Head makes some *fantastic* beers, but most of them are *not* generally food-pairable. I strongly disagree with your perception of Inedit's purpose and result.

Mind you that I have NOTHING against Spain/Spaniards but one thing I can state for an absolute certainty is that I have not been holding my breath awaiting a decent beer to be brewed in Spain. The rest of the world already has hundreds of great beers for any ocassion; some of those beers have been readily available in/near Spain for a couple of hundred years. Others like American, Chinese, and Japanese beers require a bit of travel. A great excuse to get out of Spain for a while and see the rest of the world.

King Solomon, son and successor to the throne of King David, in the Old Testament in the Bible, who tried it all, as the wisest and wealthiest king who ever lived, said in the book of Ecclesiastes, I believe it is; "There is nothing new under the sun. What has been now is, and will continue to be", or something along those lines. (My paraphrase here, as I can't recall the exact wording, but that's the gist of the issue). King Solomon tried wine, women, and song, and found nothing to be pleasing and satisfying. Maybe that's because he didn't live long enough to try this "new" Spanish beer that just came on the scene.

The only One who can give a full and satisfying life of overflowing joy and contentment is my Lord, Savior, and Master, Jesus Christ. I'm sure the "new" beer still tastes terrible. But this world will be forever, so to speak, trying to get people to cave into what is wrong and sinful, due to peer pressure such as this for one.
