How to Dry-Fry Tofu - Tip of the Day

Dry frying removes most of the moisture from tofu, allowing it to act like a sponge soaking up sauces in stir-fries and other dishes and results in a slightly nuttier, more dense tofu.


Slice a one-pound block of extra-firm tofu into about 16 equal-sized pieces. Arrange in a single layer in a 12-inch nonstick skillet (or work in smaller batches) with no oil or cooking spray. Heat tofu over high heat, pressing down on pieces every minute or two to release liquid, about 4 minutes per side. Remove from pan, slice as desired and use in recipes.
