When to Use Superfine Sugar - Tip of the Day

You may have seen cartons of sugar labeled 'superfine' or 'caster' in your grocery store, but when should you use it?

Essentially regular granulated sugar that's been ground into smaller grains, superfine sugar is great when you need granules to dissolve quickly. Bartenders use it when making simple syrups for cocktails, and it's perfect for making cold drinks like lemonade and iced tea. Recipes for meringues, which need the sweetness and structure of sugar without the grittiness often call for superfine sugar, too. If you can't find caster sugar, place regular sugar in a food processor and process for about a minute or two to achieve a similar effect.
