Warm corn-bread muffins with butter and raspberry preserves -- breakfast doesn't get much better than this. Mini or grande makes no difference. Blogger my_amii went the small route, and serves them straight up (here's her recipe). But feel free to give your muffins some playmates. Marcus Samuelsson lays on the jalapeños in this recipe. And after reading about high-fructose corn syrup and corn for ethanol and how our farmland is turning into one big cornfield to feed cattle, isn't it a relief to get back to talking about corn as just plain corn?

We are planning our graduation breakfast at the high school next month and it is potluck.. am thinking I will make these for that. Found some ideas to celebrate both high school and college graduations at http://www.celebrationideasonline.com.. lots of inexpensive DIY ideas for both our family celebration as well as the PTO gatherings. The personalized water bottle idea is terrific and we are making them for our post graduation reception at the school.

5-23-2010 @1:26PM Al Schrader said... I put two pats of butter into my Belgium Waffle maker & pour the cornbread batter in.When it blinks, the cornbread is done, about 5 minutes & no big oven heat. Result is crispy outside poofy inside cornbread. The waffle dimples hold the butter you put on it....Alfred-

It may be a simple but it's so satisfying on a cold winter day. I found some really good cornbread mixes at the Fredericksburg Farms website. Their peach pecan amaretto preserves is so addictive that it should be sold by prescription. I've never been disappointed by any product I've purchased, and I buy at least $100 per month for me and my friends.

5-23-2010 @9:37AM Stacy said... I like taking "box recipes" and doctoring them up. My favorite is using Jiffy Mix cornbread and adding a couple tablespoons of chopped up jalepeno peppers to it before baking. Adds just a little extra to it. I like Jiffy Mix because it tastes good, it is inexpensive, and it is made just a few towns away. Nothing better than buying local.

When I make corn BREAD, I use a box of Jiffy Cornbread Mix...one egg....one stick of melted UNSALTED batter, a small container of sour cream and a can of whole and a can of creamed corn. The calories are of no concern, because they fall away when you cut into this! At any rate, this is a delicious way to make cornbread.

I don't use the butter in the mix though, I make a jalapeno butter and instead of cream corn I used fire roasted corn.
5-23-2010 @10:48AM Darryl Ehlers said... I am not a cook, but I love corn bread., my wife puts pepper jack cheese in mix, which glues it together and moist not crummbly. I love to put jalapino jam and butter on them if they hold together. but jalapenoes in mix sounds good Darryl

Then you can add whatever else you like, cranberries, cheese, jalepenos, corn etc etc.

5-23-2010 @1:07PM Lani said... I use a really old recipe for "Johnny Cake" which is basically sweet corn bread, or the same as corn muffins. I like to have it with chili. It makes a great cold-weather meal.
