P.S. My go-to is Salsa Chicken! :)
Thanks!

And that's because, of course you start out when you are new with a particular recipe by measuring everything exactly, 'by the book'. But once you have found a favorite recipe and made it many times, you can add things here and there without fear, make it your own and make it the way your loved ones like best. She was fearless in that regard. Sadly my mom passed away in December last, but among many things her recipes live on because we did spend time putting together a good 'favorites' file in an old binder!

The longer I've cooked, the more recipes I've added to my list. My mom would come home after working all day and get a meal on the table by dinnertime for all 8 of us. I don't know how she did it all those years, and I'm still in awe of her cooking skills.

If you can keep it clean as you prepare you can actually sit down and enjoy your meal with your family during and after dinner! It also makes it so much smoother when hosting guests! Blast some music. Call your best friend and put them on speakerphone. Slaving over the stove is a thing of the past.
