Should You Refrigerate Oil? - Tip of the Day

Knowing which oils need to be refrigerated can save you hassle -- and money -- as we approach the warmer months of the year.

Ever been in an experienced cook's kitchen and noticed that their sesame oil's in the fridge? They're on to something. Fragile nut oils like sesame, walnut and hazelnut -- great for flavoring salads and adding a nutty accent to dishes -- are especially susceptible to spoiling if exposed to too much sun and heat, so keep them in the fridge (or at least a cool, dry, dark space) if at all possible. Cooking oils like olive oil and canola oil can be refrigerated, but if you go through a bottle in a few weeks, there's no need. If you've gone to a big-box store, though, and have large quantities, try to portion out a smaller amount for the short-term and store the rest in that cooler place. One note: if you've refrigerated an oil and it has solidified, fear not: just remove an hour before serving and it'll return to its viscous state.
