How to Cook Quinoa - Tip of the Day

Quinoa (pronounced keen-wah) is a nutritional powerhouse which cooks like a grain, and also happens to be kosher for Passover. If cooked wrong, it can turn out soggy and waterlogged. Here's how to make it fluffy, light and ready to be seasoned.

Rinse raw quinoa in cold water three times, using clean water each time. Cover quinoa with a few inches of water in saucepan, and bring to a boil. Boil for ten minutes, then strain and rinse. Transfer quinoa to a fine-mesh steamer basket and set over a shallow layer of simmering water. Cover with a folded damp towel or pot lid and steam until light and fluffy, an additional 10 to 15 minutes, tossing with a fork occasionally. It's a great side for proteins or as a salad tossed with chopped veggies and feta or dried fruit and nuts.
