Bacon has become the little black dress of the food world -- throw it into any dish and it's fabulous. From old-school bacon and eggs, B.L.T. and quiche Lorraine to spaghetti carbonara, we've paraded full-throttle into bacon mania. L.A. food critic Jonathan Gold, a baconista practically from birth, wrote in a recent review of restaurant Fig that it serves "bacon-wrapped bacon, which is a warning shot fired over the heaving bow of S.S. Food." Just a guess, but there's probably a waiting list to crew on that tub.
Meanwhile, when it's not being wrapped in itself, bacon shows its sweet side. In his Great Book of Chocolate, Chez Panisse pastry alum David Lebovitz candies bacon and crumbles it into chocolate chip cookies, inspiring bloggers stickygooeycreamychewy and traceysculinaryadventures (who shot this photo) to give it a go, and share the recipe. Brown sugar is sprinkled over the bacon and it's baked until caramelized, and when added to the cookies it supplies just a wee hint of salty, bacony goodness. Remember: little black dress. It works.

As a vegetarian for over 20 years, I was always happy that I could take refuge in dessert (other than worrying about lurking gelatin, or lard in pie crusts). The fad of putting bacon in everything is making even the dessert table unmanageable, which is really annoying.
Bacon isn't so much the Little Black Dress as it is Legwarmers or Deely-boppers - something we're going to look back upon in ten years and wonder, "what were we thinking?".

3-23-2010 @11:03AM LinC said... I'm not a vegetarian, but I'm also tired of the bacon craze. I had some bacon-chocolate truffles recently that were icky. Waste of good chocolate. But they were selling them because adding bacon to anything is trendy. Tracey is right -- time for this fad to fade.

3-23-2010 @8:09PM tom said... A few yrs ago, I had a fried Twinkie. OMG, it almost stopped my heart! If I remember right, somewhere in the vicinity of 1800 calories. Bacon candy will have it's 15 minutes, but we'll be back to just bacon and eggs.

3-23-2010 @8:27PM dtm said... jean anderson has a candied-bacon recipe in her wonderful "a love affair with southern cooking," adding prepared mustard and black pepper to the brown sugar. the candied bacon has been adored at parties the few times i've made it, and it went particularly nicely with a cocktail made with bacon-infused bourbon.

Bacon or MEAT isn't for everybody. So what. DON"T eat it then. That is what this GREAT country of ours is about FREEDOM!!!
You are free to like or dislike bacon. Too bad it is not the same about Health Care anymore. Lets just hope when THIS government of ours gets done with us we will have a RIGHT to choose bacon or no bacon. Because the way it is going they may force us to eat bacon whether we like to or not OR be fined!

Thing is that the government has absolutely nothing to do with whether or not you can either enjoy bacon or if you want to eat it or not. You still have that right. Stick to the subject and then WE CAN ALL JUST GET ALONG. (And it might be a good idea for you to read the ENTIRE healthcare bill before you say things about it. It would add to your knowledge base.)

Actually, yes, Dragon, I have a very successful job (considering the times of day you have posted, I fear that YOU don't have a job - or at least, one that makes you happy). I also have an ability to read, comprehend, type, and SPELL things correctly. It's too bad you lack those qualities.
That being said, you have your right to think what you will about healthcare reform (or anything else, for that matter), as do I and millions of others. And, dear heart, I HAVE read the full text of the bill and did so WAY before the bill was passed. And, yes, I did READ and COMPREHEND the entire bill. I have a strong feeling you did neither - although you might have READ the bill, there is no way you would even begin to comprehend it or any part of it.
You need to practice what you preach. It would be helpful to not only the people who post ON THE SUBJECT AT HAND, but also to those around you. It's unfortunate that you are such a miserable person (and I mean that in someone who is unhappy). As I said, you have the right to think what you will. And so do I.
