5 Questions for: Spike Mendelsohn

What food do you eat that would give you a bad rep if other chefs knew about it?
SM: Once in a blue moon I'll have a Lunchable, if I find it.

Which celebrity would you love to cook for and why?
Angelina Jolie's son Pax, who is from Vietnam. I lived there and learned the cuisine firsthand. I'd like to cook for the whole family....what a dinner it would be.

What chef would you like to see naked?
Chef Marcela Valladolid.
What do you think of vegetarians?
Have a steak every once in awhile.....please.

What's going on in the food world these days that's pissing you off?
No one wants to see calorie intake on menus. Please just get over it!

Chef Spike was a contestant on Top Chef Chicago, on the Bravo TV Network, and is currently in the kitchen at Good Stuff Eatery, on Capitol Hill in Washington, which is owned and run by the Mendelsohn family.

I've seen and worked with too many people who got the false impression they actually have some kind of talent because mommy made them the chef. I'm not saying this guy isn't talented, like I said, I know nothing about him, but your comment rings quite true, in general

3-18-2010 @7:00AM Chris said... That reminds me of the time we had Sunday lunch at a friend's house. Invited were 2 Vegans. He was very good, cooked them dinner separately - he even made the roast potatoes in a separate pan so they didn't get any meat juice on them.

They complimented him on the food, especially keen on the roast potatoes. It wasn't until after they left that my friend realised why the potatoes tasted so good - he'd cooked them in goose fat. Oops...

Kind of funny how you can have no experience because you just got out of school, or have only worked in a place owned by your parents, and be considered a "chef." It really turns these guys into clowns more than anything else. I believe it was Wolfgang Puck who once said "WE are chefs, not clowns!"

I wondered that at one time too, and came to the conclusion that discussion boards on topics like that are simply an invitation to ever moron around to write some snotty, racist, off topic and call people names... keep in mind, AOL hasn't really got a stellar reputation as far as the intelligence level of it's users is conserned. Whether my conclusion is the reason or not, it's quite definitely true.
