In Season: Morels - Tip of the Day

Spring brings a multitude of edible delights, and paramount among them are morel mushrooms.

You may have seen morels -- those tiny, crenellated mushrooms that grace spring menus at top restaurants around the country. Derived from the Latin term Maurus, meaning brown, morels are actually grayish-tan in color, but it's their delicate, slightly nutty flavor and their ability to absorb butter and cream sauces that make them the object of slavish obsession for foragers, chefs and eaters alike. My favorite ways to enjoy them are tossed into a light cream and herb sauce with pasta; sautéed with garlic and butter; or dusted with a light seasoned coating and flash-fried to create nature's most luscious poppers.
