5 Questions for: Anthony Bourdain

What food do you eat that would give you a bad rep if other chefs knew about it?
AB: If I'm disgracefully drunk, I've been known to eat really nasty macaroni and cheese at Popeye's or the Colonel. I'm very ashamed and try to do this only with a bag on my head.

Which celebrity would you love to cook for and why?
Keith Richards, because he's smart as hell. Funny. Still here. And because he likes steak and kidney pie.

What chef would you like to see naked?
Oh.....jesus! [Shudders.] I'm going to have nightmares just thinking about this question.

What do you think of vegetarians?
Unless Hindu? Not much. I think they make bad/rude travelers. Even Jonathan Safran Foer -- in his reasonable and thought-provoking argument for vegetarianism -- seems to acknowledge this somewhat.

What's going on in the food world these days that's pissing you off?
I think things are going very much in the right direction. In general there seems to be a turn away from bullshit. A continuing slow movement toward quality ingredients. So I'm pretty happy with the way things are going. Better than at any point I can think of in the past.

3-17-2010 @10:27AM Leroy said... The fact that some of you have encountered obnoxious vegetarians does not mean that all of us are like that. Remember that it is far more likely that you will remember someone who pissed you off than it is that you will remember someone who quietly minded their own business like I and my vegetarian friends do. Immediately assuming that everyone in class X behaves like the one person in front of you is a serious mistake in logic.

As usual Chef Bourdain calls it as he sees it. As an aspiring chef, I embrace all cultures, all beliefs, which doesn't mean I want to eat the way anyone does. I happen to love meat (pork is king) and I don't expect everyone to eat meat. I love pastrami from Katz's, dim sum on Sundays, and if everyone ate as I did, I shudder to think of the waiting line!!!!

It all comes down to respect. Diversity is what keeps everything interesting, and it's what keeps everybody learning and growing...as long as there is respect.
