Bread & Tomato Salad - Feast Your Eyes


Simple ingredients can often yield bold flavors when combined. Take, for example, basics like tomato, bread and olive oil; together these three elements offer endless possibilities.

This Mediterranean-inspired tomato-and-bread salad from Stone Soup is mixed with sherry vinegar and seasoned with salt and pepper. The author cuts up the tomatoes into large chunks, then gently presses down on them to release their juices. To make this salad heartier, add in slices of jamón or toss with arugula.

2-15-2010 @8:52PM Paula Zargaj-Reynolds said... You're so right. Any variation of the bread and tomato salad is the perfect meal. And when I use up stale bread to make it, I get the added pleasure of knowing my grandmothers would approve of my desire to be creative rather than wasteful.
