Chickpeas with Garlic and Bay Leaves - Feast Your Eyes

When you see something as delicious looking as this, becoming vegetarian not only seems perfectly feasible, but desirable.

All it takes to transform a humble can of chickpeas into this elegant dish is garlic, shallot, bay leaf and olive oil (oh, and some time in a 400-degree oven). The cook responsible for the above masterpiece also has a thing for Swiss chard, and thus stirs some in on occasion for a completely satisfying side dish.

This dish is really much better than it looks but I agree, there are much better pictures to make you want to go veg such as MEAT.ORG - the website the meat industry does NOT want you to see, EVER!! And besides, meat eating animals have very long teeth with very short colons so that meat doesn't rot and ferment causing colon cancer that has become rampant in humans. Meat starts rotting after four hours but takes 3-5 days to eliminate it, ewwww!

The oil, the bay, the garlic, infuses deeply into them, giving them a texture that is velvety, and a flavor that is complex, a bit nutty and a bit sweet. With the vegetal funk and sharp garlic of the chard it's really great. A fried egg on top makes this dish really full of win.

Anyone who knows anything about garlic and shallots knows the magic that occurs with roasting as they become richly sweet and while I'll agree this is not an especially pretty picture I can't wait to try this dish.. Chick peas have a wonderful ability to absorb flavors so this dish sounds wonderful. I love both meat and vegetables and believe we have the right to eat both, though I do believe that animals deserve the right to being raised in healthy environments with plenty of sunshine, green grass and fresh clean water with humane methods of slaughter.
We bring condemnation upon ourselves by denying them these rights for the sake of greater profits.
