Table for One - Duck Tacos

Few of us want to make a complicated lasagna for solo dining -- by day six, you'll never want to see lasagna again! In this series, AOL Food staffer Sarah LeTrent taste-tests simple recipes suitable for a "table for one."

Taco night has become as prevalent an occasion as pizza night and spaghetti night. Perhaps it's the do-it-yourself nature that appeals -- diners can pile on just about any combination of meat, seafood, cheese, sour cream, vegetables or even fruit into soft or crunchy tortillas.

Or perhaps it's because they're fresh and simple-to-make. Maybe it's a little bit of both. In any event, most people have never met a taco they didn't like.

When you've exhausted yourself on boneless, skinless chicken breasts or those lidded rotisserie chickens, consider the duck. If you can cook other types of poultry, you can cook duck. And the rewards are juicy, delicious -- and best of all, just for you.

Duck Soft Tacos
1 duck leg
1 avocado
1 teaspoon lime juice
Crumbled goat cheese
Purchased red salsa
2 6-inch corn or flour tortillas
Salt and pepper, for seasoning

Preheat oven to 325 degrees F. Pierce the skin of the duck leg a few times with a skewer and season well on both sides with salt and pepper. Place the leg skin-side up on a baking sheet, and roast for an hour, turning once, until the meat is completely tender. Once cool enough to handle, remove the meat from the leg bone, and put to the side. (This can be done up to 3-4 days in advance, refrigerating the shredded meat until ready to use).

Place avocado in medium bowl. Add lime juice and mash until smooth -- salt to taste.

Spoon a layer of salsa onto an open warm tortilla. Top with shredded duck meat and a dollop of guacamole (mashed avocado). Sprinkle with goat cheese. Roll up and serve.

2-24-2010 @8:48AM Jacob said... hm...taco night:) well it does "sound easy" but man man do you not know that it is much more difficult to cook a duck than chicken. It takes 3 times more to cook thoroughly this bird.So to make the long story short and write resume - it is better to use chicken breasts since they are easier and faster to cook.
