Doneness Temperatures of Meat - Tip of the Day

Whether medium-rare or well-done, learn what internal temperature a steak should be for your desired doneness.

The USDA recommends cooking steaks and roasts to at least 145 degrees Fahrenheit to achieve a safe internal temperature and prevent food-borne illness. But you don't want to cook the steak to a rubbery death! With the help of a meat thermometer, or a little beef know-how, that desired stage of doneness is only a few degrees away.

Rare: 120-125 degrees Fahrenheit

Medium-rare: 125-135 degrees Fahrenheit

Medium: 135-145 degrees Fahrenheit

Medium-well: 145-155 degrees Fahrenheit

Well-done: 155+ degrees Fahrenheit
