Peeling Fresh Onions - Tip of the Day

Peeling small onions can be a little tricky because of their stubborn exteriors. Follow this tip to peel them with ease.

Peeling onions isn't always a snap -- especially when peeling smaller onions, like cipollini or pearl onions, when the skins can be somewhat more tenacious, and you don't want to lose any of the precious slivers of the onion.

If you have a lot of onions to peel in a small amount of time, or you simply want to make sure you don't lose any of the precious meat with some skin that refuses to slip off, try blanching the onions. Simply toss the unpeeled root vegetables into a pot of boiling water, immerse them for a minute, then immediately submerge them in a cold water bath to stop further cooking.

Once cooled, the skin of the onion should slip right off!
