Leftover Pie Dough - Tip of the Day

Even though the crust of your pumpkin pie on Thanksgiving turned out flaky and buttery, consider everyone "pie"-ed out. Try these non-pie ways to use up leftover disk of dough.


For bite-sized treats, roll out the pie dough, spread with butter and sprinkle it with a mixture of cinnamon and sugar. Then, cut out disks or designs of dough using a cookie cutter or knife and bake at 350 degrees for about 10 minutes until golden-brown.

If taking the savory route, you can do the same thing as above but substitute the cinnamon-sugar with a grated nutty cheese like Parmigiano-Reggiano or Gruyère.

Or for a Latin-inspired twist, take your usual empanada filling and put in in the leftover dough before crimping and baking.

11-28-2009 @6:29AM Seth said... My mother was taugh this by her father and I presume its been passed down from generations prior. We called it "Petiesez" (SP? - pronounced "pet-i-says") the only difference is we would take a doughknife or something similar; cut into strips (about 1/2inch w * 5inches L) and then roll them. I used to prefer to eat these instead of the pie!
