Thanksgiving Recipes - Hot Turkey Sandwich

Need a way to spruce up those turkey leftovers? Top the traditional day-after open-faced turkey sandwich with a decadent mushroom and white wine gravy.

Hot Turkey Sandwich
Provided by Woman's Day

2 Tbsp all-purpose flour
1 tsp poultry seasoning
1/8 tsp each salt and freshly ground pepper
1 lb turkey tenderloins, cut in /3-in.-thick slices
2 tsp oil
1 pkg (8 oz) sliced mushrooms
1 jar (12 oz) onion gravy
1/4 cup dry white wine
8 slices firm white bread
1 can (8 oz) whole-berry cranberry sauce

Mix flour, poultry seasoning, salt and pepper in a plastic food bag. Add turkey slices and shake to coat.

Heat oil in a nonstick skillet over medium-high heat. Add turkey; cook, turning once, 5 minutes, or until cooked through. Remove to plate and cover to keep warm.

Add sliced mushrooms to pan. Sauté 3 minutes until mushrooms start to brown. Add onion gravy and dry white wine; boil 1 minute. Remove from heat.

Spread bread with whole-berry cranberry sauce. Top with turkey and gravy.
