Spanish Ham and Melon with Spiced Vinaigrette
Provided by Tyler Florence

1 melon sliced into wedges
1/2 pound Serrano ham, thinly sliced
1/4 cup sherry wine vinegar
3/4 cup olive oil
1 tablespoon honey
1 shallot, sliced finely
1/2 teaspoon fenugreek
1/2 teaspoon thyme

Make the vinaigrette by combining the vinegar, olive oil, honey, shallots and ground spices in a large bowl. Combine the olive oil slowly as you whisk the vinaigrette. Slice the melon into wedges and make a 3/4 length cut between the skin and flesh. Top the wedges of melon with paper-thin slices of Serrano ham and drizzle with vinaigrette.
