Thanksgiving Recipes - Sweet Potato Casserole

Nearly every cook has their own take on the iconic sweet potato casserole. Do you sprinkle it with brown sugar or top it with marshmallows? Do you put pecans in it or go without? Despite the variations, the sweet sweet potato dish tastes more like dessert than a side vegetable.

Sweet Potato Casserole
Provided by Grocery Shopping Network

3 cups mashed cooked sweet potatoes
1/2 tsp pure vanilla extract
1/2 cup butter, melted
1 cup granulated sugar
2 eggs, beaten
1/2 cup milk
1 cup packed brown sugar
1/2 cup all-purpose flour
1/2 cup butter
1 cup chopped pecans

In a large bowl, beat together the first six ingredients and place the mixture in a lightly greased 9 x 13-inch baking pan. Set aside.

Preheat oven to 350 F. To make the topping: In a food processor, combine all of the ingredients and process until crumbly. Sprinkle the mixture over the reserved potatoes and bake, uncovered, for 45 to 50 minutes or until browned and bubbly. Serve immediately.
