A friend had informed us prior to sampling what exactly these buttery white grains were. Had we not known, we would have just found them to be pleasant, nutty things similar to cooked, toasted risotto. We ate them at the San Angel Inn, which serves up escamole with fresh guacamole and corn tortillas.

Escamole tostadas with cheese and guacamole were so incredibly delicious!
When in Queretaro, eat at Hacienda de Don Ramon!!!

6-15-2010 @7:24AM Alex said... I tried Escamole in Mexico DF last week, cooked in salted butter, and served with hand made wholemeal tortillas, with some nice mild salsa - delicious. Buttery and nutty - think of it as the Mexican caviar, and dive in!
