Tip of the Day - Homemade Ricotta

Making cheese at home may seem quite daunting -- but cool, creamy ricotta is an exception.

Whether as a filler in pasta, pancakes and cannolis, or as delicious crostini topping, fresh ricotta is lush, mild and simple to make. With just four ingredients -- whole milk, cream, lemon and salt -- and cheesecloth, cheese-making becomes a feasible at-home activity.

Earlier this month, Slashfood offered 25 "must-do" recipes from recently-shuttered Gourmet magazine.
