Pumpkin seeds, much like pumpkin flesh, pack a pretty good nutritional punch -- phosphorus, zinc, iron, magnesium, protein and vitamin K, to name a few.

First and foremost, remove the seeds from the pumpkin and wash them off to remove excess pulp. The seeds will need to be spread out on a paper bag or towel and dried overnight so they don't burn in the oven.

When ready to toast, arrange the seeds evenly on a baking sheet and bake for about 10 minutes at 350 degrees. Season with olive oil and salt, cayenne pepper or any variation of spices you like.
