Case in point: this quick crustless quiche from Pink of Perfection's Sarah McColl. While the lack of crust might make it more of a frittata than a quiche, we're more concerned with what's in it than what's not. Packed with portobello mushrooms, frozen spinach and an onion, this eggy meal is easy as pie (no, it's easier) and, better yet, it costs only $5 to make!

10-14-2009 @12:27PM Gary said... I made a variation of this for dinner last night and it was fantastic. I used a store bought pie crust in one of my wife's deep dish pie plates. Sauteed up an onion, some broccoli and some sliced mushrooms and put that all in the bottom of the dish on the crust. Then whipped up 8 eggs, about a half cup of milk and 8 ounces of shredded cheddar and poured it over the veggie mix. Baked at 350 for about 45 minutes. Came out great!
