Tasty Pumpkin Vines - Tip of the Day

Sure it's a vine, but that doesn't mean the stem atop the pumpkin isn't ripe for eating.

With the whirlwind that is Halloween, North Americans have gotten quite used to tossing pumpkins once the holiday is over. But even when the soft flesh of the vegetable is added to a warming autumn dish, there's still one part that's wasted -- the hard green stem.

It might look like a rugged, ripe-for-the-trash part of the squash, but pumpkin vines are edible. One Nepalese dish called Pumpkin Vine Tips Tarkari takes the oft-discarded remnant and sautes it with curry seasonings until tender, before serving it with rice.

As we make our way into the cold months of fall and winter, how can you shrug off nature's last green taste of the season?
