Tip of the Day - Cucumber Juice Cocktails

Have a few summer cucumbers lingering in the fridge? Put them to good use by juicing them for refreshing cocktails or family-friendly mocktails.

Cucumber juice is a surprising infusion in any libation. All you need are some peeled and diced cucumbers, a cheesecloth and a bowl to get started. Simply puree the diced cucumbers in a food processor or blender, strain the juice into the bowl through the cheesecloth and you're done.

Mixologists have recently taken a shine to the unexpected vibrance of the green juice and are using it in everything from cucumber margaritas to mojitos and more. For a more liver-friendly tonic, the juice can easily be mixed with sparkling water and sugar. For added flourish, garnish your concoction with a crisp slice of cucumber.

After all, you might even prefer cuke cocktails to pickles.
