Quick Lemon Sorbet - Tip of the Day

Fresh lemon sorbet looks and tastes totally gourmet, but it's actually one of the easiest things to make.

Home ice-cream makers can seem a bit daunting, but this recipe may change your mind. In addition to creamy variations on traditional ice cream, which can be time-consuming with double-boiling and ice baths, don't forget refreshingly light sorbets.

You can make a quick and simple sorbet with nothing more than a simple syrup made of equal parts sugar and water, plus some lemon juice and zest. That's it. The recipes in the Cuisinart recipe booklet make sorbet impossible to refuse. Just boil two cups of sugar and water together until the sugar has dissolved. Let cool completely, then stir in a cup and a half of lemon juice and a tablespoon of lemon zest. Pour the mixture in the machine, let it whir for about a half hour, and then freeze it to thicken.

The result is a tart and sinful frozen treat perfect for a quick jolt or palate cleanse, or to please any eager citrus fiend. And all it takes is sugar, water and lemons!
