Savory Cheese Cookies - Tip of the Day

Sugar might dominate the cookie world, but going savory can open up a whole new world of options.

Adding savory cheese to your cookie baking is a technique that will not only satisfy the (rare) person who dislikes the sharp sweetness of a cookie, but also spruce up a rather bland and typical cheese tray. Simply take a classic recipe for Cheddar Shorties, and experiment with spice and cheese flavors.

A classic recipe calls for a cup of flour sifted with a 1/2 teaspoon of paprika (smoked works wonderfully), a 1/2 teaspoon of mustard powder and a dash of cayenne. In another bowl, cream 1/2 cup butter and then gradually add 2 cups of grated cheddar cheese (try smoked applewood) until mixed well. Combine with the dry ingredients, roll into logs, chill and then cut and bake in a 400 degree Fahrenheit oven until nicely golden.

For the coinlike cookies above, make the logs about an inch or two in diameter, and approximately half an inch thick. But these can also be made fatter and thicker -- just allow for a longer baking time.
