Homemade Instant Pancake Mix - Tip of the Day

Forget buying that instant pancake mix. It's just as easy to make your own!

Homemade pancakes are a wonderful breakfast indulgence, but sometimes there is only time for the instant mixes. Rather than grabbing the store-bought variety, whip up and store your own. It's as easy as mixing up some dry ingredients, throwing them in a jar and putting the mix into the pantry until pancake cravings come a-calling.

The mix we prefer comes from Nigella Lawson, and all it requires is a little flour, baking powder, baking soda, salt and caster sugar (also known as superfine sugar). When it's time for breakfast, just add eggs, milk and butter.

It's a lifesaver in a pinch, and can even serve as an easy homemade gift for your favorite pancake lover.
