The mix we prefer comes from Nigella Lawson, and all it requires is a little flour, baking powder, baking soda, salt and caster sugar (also known as superfine sugar). When it's time for breakfast, just add eggs, milk and butter.
It's a lifesaver in a pinch, and can even serve as an easy homemade gift for your favorite pancake lover.
