Yogurt in Chicken Marinades - Tip of the Day

A little yogurt can elevate ho-hum marinated chicken to new levels of deliciousness.


Just a spoonful of yoghurt elevates any chicken marinade.

When it comes to poultry, it's easy to throw together a quick oil-based marinade, let the bird soak up the flavors, and then cook it up.

But the addition of one mere ingredient can transform that marinade from tasty to delicious: yogurt. Simply adding some of the white stuff to your mix will allow the flavor of other herbs and spices in the marinade to penetrate the meat more.

Heston Blumenthal, man of scientific culinary inquiry, even investigated the phenomenon and discovered just how magical yogurt could be. Who are we to argue with science -- or the glee of our tastebuds?
