Use Up That Watermelon - Tip of the Day

Let's face it -- as tasty and refreshing as a watermelon is, to sit down and eat a whole one would be like drinking from a hose for five minutes instead of getting a glass of water. In other words, it's too darn much for one body to take. So what do you do with the excess after eating a few slices?

Luckily, there are lots of ways to use up the water-drenched fruit. A quick and easy fix can be had in the Kitchn's popsicles, or snag a little spice with Epicurious' Watermelon Salad with Serrano Vinaigrette.

Perhaps the absolute coolest thing you could make is Bob Blumer's (the Surreal Gourmet) Chilled Watermelon Soup. Sounds simple (and it is): a pureed watermelon soup -- but he serves it up in a mint-flavored ice bowl.

What's your favorite use for leftover watermelon?
