KFC's Secret Blend of Herbs and Spices Cracked?

A former Wall Street executive has plucked himself a new career trying to unlock Col. Harland Sander's fried-chicken secret.

Ron Douglas, a former finance director at J.P. Morgan, has been experimenting in the kitchen over the last few years in an attempt to crack KFC's world-famous Original Recipe, the New York Post reports. With his sixth attempt, Douglas thinks he's finally done it.

"Nobody knows what those 11 herbs and spices are, Douglas told the paper. "But if you taste my chicken, you would find the flavor very similar to KFC."


Douglas isn't alone in his quest to fake favorite fast-food and chain-restaurant recipes. He found a burgeoning community of copycat enthusiasts online, so he decided to create his own copycat recipe Web site, RecipeSecrets.net. Douglas left J.P. Morgan in 2007 to manage the site full-time.

He self-published a cookbook of recreated recipes, "America's Most Wanted Recipes," which Simon & Schuster republished earlier this month. The book includes the recipe for the "decoded" KFC blend.

But KFC isn't worried about Douglas' copycat recipe.

"Colonel Sanders' Secret Recipe of 11 herbs and spices is one of the most famous recipes in the world, and the precautions taken to safeguard the identity of the ingredients is second to none," Rick Maynard, a KFC spokesman, told Slashfood. "Plenty of people have tried to duplicate the recipe over the years, but there is still only one place to get authentic Original Recipe Chicken -- at a KFC restaurant."

In his book "Big Secrets," William Poundstone revealed a laboratory analysis of Kentucky Fried Chicken: "The sample of coating mix was found to contain four and only four ingredients: flour, salt, monosodium glutamate, and black pepper. There were no eleven herbs and spices — no herbs at all in fact... Nothing was found in the sample that couldn't be identified." So much for the "secret." In fact, the chicken's ingredient statement is available on KFC's Web site.

Someone's got some splainin' to do....

Chickens have their beaks cut off, live in their own filth in overcrowded cages and if you still want to eat there, good luck to your digestive system. If chickens could type, there'd be a support group on the internet.

I really do love the original recipe chicken but have always found that pressure cooking the fat through the meat, along with the abundance of MSG, does ALWAYS make me feel sick within an hour or so. Why do we keep going back? MSG is an excitotoxin. It kills neurons and keeps us just stupid enough to keep craving all those additives. Even the new grilled version had similar side effects. It is almost as if my body craves KFC whenever it wants to cleanse itself while experiencing the neurological trauma of processed free glutamic acid (MSG.) Stroke patients, toddlers, etc. are especially vulnerable to this neurotoxin. When the FDA asked the fast food establishments to voluntarily disclose the amount of MSG in their recipes, I was not suprised to find that KFC refused comment! Bon Appetite.

7-22-2009 @12:08AM MIKE said... I love the KFC chicken but I always remove the skin "full of cholesterol), most of the salt is also gone. Now, I know Ron Douglas and bought his recipee book. He weekly sends me many original recipes from the major restaurants, such as Olive Garden's chicken Marsala, Wendy's chili and many more. I am an amateur cook and tried them all, they are the real thing. Tried them on friends and they agree they are the real taste. He travels extensively and brings recipees that are fantastic.

As the article says he asssembled and published a fantastic cook book which I purchased several years ago. You can buy it by mail or download for 29.99 via the Net which I did. I keep it in my hardrive and cook up a recipee whenever I need one on my comp. All are masterpieces from chefs all over the world and most of the great restaurants.

For the original recepie the chicken is dipped into a milky liquid then rolled in the floury mix of herbs and spices then deep fried under pressure. There is a lot more to it than finding out the actual herbs and spices. The milky liquid came in a mix as does the herbs and spices.
