The Perks of Quail Eggs - Tip of the Day

We can change the way we make eggs -- scrambled, poached, fried -- but what about changing the eggs themselves? Mix up your scrambling routine with quail eggs.

These little buggers are like condensed chicken eggs. They do have a little more cholesterol and fat than the shells dropped from their larger feathered friend, but they also carry important vitamins. Quail eggs have even been an important part of Chinese medicine for years, and many claim they are useful for combating allergies and skin conditions.

Personally, we're going to quell our quail fears with this Epicurious recipe -- and boil a few to serve with toasted sesame-seed salt.
