Avoid Mushy Marinated Meat - Tip of the Day

Did you buy marinated meat at the grocery store, but found it to be too mushy once it was cooked?

A tip from Slashfood's summer grilling expert Gena Knox:

Prepare your own quick marinade and avoid premarinated meats. The acid in the marinade breaks down the proteins and causes the meats and seafood to be mushy and have a strong, artificial flavor.

Marinades can be as simple as olive oil, lemon juice, fresh herbs and garlic and can turn a meal into something spectacular. (Click on the photo for Dad's Famous Marinade, a recipe from Flickr user Corey Ann.)
