While we flour our counters to make sure dough doesn't stick while it's being kneaded, there is usually some sticky residue to clean up afterward, and a wet sponge or cloth is just about the worst tool for the job. The wetness will work with the dough and flour to turn your surface into a seemingly impenetrable and sticky mess. So, before preparing to wipe up the leftover dough, grab the pastry scraper.
This tool is not only good for handling and cutting dough, it's also excellent for cleaning it up. Use it to scrape the counter until all the dough is free, and then get out the sponge or cloth for a final clean sweep.
