
Technically, the Greek word for pork belly is pantsetes. But if this photo is any indication, the English translation of pantsetes is "mind-numbingly delicious." Prepared and photographed by Kalofagas' Peter Minaki, this pork belly was, true to the season, treated to a long and loving session on the grill, and then seasoned, per tradition, with lemon juice, sea salt and dried Greek oregano.
The belly is served on top of crusty slices of bread, which soak up the meat's juices. So while the belly itself is undoubtedly pretty freaking good, it's safe to assume that the unassuming bread in this photo is kind of like the shy nerd cowering at the back of the senior class photo: not much to look at, but destined for (meaty) greatness.
