Have you traded up to freshly-cracked pepper yet? Ditching the box of the pre-ground stuff and spending the extra buck or two for a small grinder may be the cheapest, tastiest investment available to the home cook.
Nigel Slater, author of the excellent book APPETITE, is among the cooks who are huge proponents of fresh pepper, which adds loads of aroma and flavor to dishes. Slater actually suggests going into someone else's kitchen and -- if you spy the dread box of pepper -- tossing it across their kitchen into his or her trash can. "That should get your point across," he huffs.

4-07-2009 @1:13PM Shylah said... I can't even stand the smell of pre-ground pepper anymore. I love the multi-coloured peppercorns, and have recently taken a liking to grains of paradise, which have a milder peppery flavour/scent. Very yum.
