Halfway through a baking project and realize you're out of baking powder? Make your own with these substitutions.
Most North American baking powders are double-acting, meaning it leavens when liquid is added and when it heats up. If you don't have baking powder at home, substitute 1 teaspoon of double-acting baking powder with:
- 1/4 tsp baking soda + 1/4 tsp cornstarch + 1/2 tsp cream of tartar
- 1 1/4 tsp single-acting baking powder
- 1 1/2 tsp phosphate or tartrate baking powder
- 1 tsp ammonium bicarbonate (creates light, airy cookies; best for small bakes goods so ammonia odor can evaporate during baking)
