While this isn't the most stunningly gorgeous of the food pictures we've featured in this space, I am totally enamored of these pancakes. I am in awe of the genius it must have taken to combine corn, cheddar and bacon into one savory breakfast dish. Dawn featured these cakes over on her blog Vanilla Sugar and says that they were inspired by a spicy corn muffin. Sounds good to me!

3-03-2009 @8:57AM Ander said... There's a traditional dish in Colombia that is just like that (sans the bacon side), called "arepas de choclo". They do them with a mozarella-type cheese, rather than cheddar, but they look exactly the same.
