
While yogurt itself makes a delicious desert with fruits, nuts, and honey, it can also be the secret ingredient in a baked dessert, such as muffins and cakes. My interest in yogurt's use in baking began when making blueberry muffins a few months ago. I followed a recipe that called for a half a cup of yogurt, and I was pleasantly surprised by the results - deliciously moist fluffy muffins. Yogurt makes cakes and muffins more chewy and moist.
In baking, yogurt can be used to reduce or replace oil, butter, and sour cream. Besides replacing these more fatty ingredients, yogurt creates a more tender texture.
