
When I was in middle school, I absolutely adored those nights when my mom would make meatloaf for dinner. Not so much because I liked it in it's original form, but because I LOVED getting to have a meatloaf sandwich for lunch the next day at school. She'd make the sandwich on sourdough bread, moistening the bread with a little ketchup and adding a leaf of romaine lettuce for color. Those sandwiches were good.
Ezra Pound Cake's Harlem Meatlove Sandwiches look like a more refined version of my mom's and they've got me thinking about making meatloaf this weekend, just so I can have a sandwich. Yum!
