Do you want your Christmas turkey carving to be a breeze? The wishbone is the key.
The wishbone is always that dried Y that gets wishes placed on it before eager fingers crack it in half. But the wishbone can also serve another function.
If you want to carve at the table, or just make turkey or chicken carving go smoothly, remove the wishbone before roasting; this will make things easier. If you get the bird from a butcher, you can ask them to remove the bone, but if not: Find the bone behind the neck skin, and carefully cut with a paring knife and pull it out.
And it doesn't have to mean the end of wishes. Just throw it in the pan with the bird and roast it, then dry it and proceed as usual.
