
There are several dishes you can make with leftover turkey. Just last year, fellow blogger Bob Sassone recommended turkey mornay, essentially turkey broiled in a creamy sauce of bell peppers, onions, and cheese. You can also try turkey chili and turkey tacos.
After taking most of the meat off of the bones, you can use the turkey carcass to make soup. Boil the turkey bones and skin in water for about 45 minutes. Add a variety of vegetables: onions, carrots, parsley, thyme, and celery. What would Thanksgiving weekend be without your typical turkey soup?
