While turkey may be the centerpiece of many people's Thanksgiving dinners, the meal would not be the same without its pumpkin pie, sweet potato pie, winter squash, parsnips, pears, Brussels sprouts, and much more. In fact, the Thanksgiving turkey seems like the only meat associated with the meal. Falling at the end of the season, this holiday provides a great opportunity to make use of the fresh fall produce. So, if you're a vegetarian or serving vegetarians this season, there are plenty of dishes that you can make to celebrate the end-of-fall harvest.
Below are 8 vegetarian Thanksgiving recipes:
- Maple glazed parsnips and carrots
- Chantilly potatoes with a parmesan crust
- Vanilla bean-whipped sweet potatoes
- Parmesan-roasted butternut squash
- Smashed rutabagas with ginger-roasted pears
- Apple Pie
- Sweet potato pie with pecan topping
- Roasted winter squash and parsnips with maple syrup glaze and marcona almonds

Some great ideas here (and as an almostvegetarian.com person I appreciate the effort), but I do have two thoughts . . .
First, some of these recipes are NOT vegetarian. The two that use Parmesan cheese, for example, are not because Parmesan cheese is made with rennet (from a cow's stomach). And, second, there is no real centerpiece dish here - just a lot of pretty side dishes.
And, for me at least, a lot of side dishes hastily sourced online does not a meal make. In other words, there is no real cohesiveness to this menu, is there? (Well, except for the pretty consistent sweets theme with the maple syrup and vanilla and sweet potatoes and pecans and so on). But, hey, that's just my take on it.
Happy Thanksgiving!
