More and more people are discovered that they have gluten intolerances these days (and many of them have documented their dietary changes on these here interwebs). A gluten-free lifestyle can be a huge adjustment but there are some good cookbooks out there that can help with the transition. One such cookbook is 1,000 Gluten-Free Recipes, which has become the modern-day Joy of Cooking for gluten-free set. This book clocks in at nearly 700 pages and has recipes for just about every dish, baked good, sauce and salad that you could possibly want to prepare. It's not a glossy book with pictures of every recipe, instead it strives to provide delicious foods that appeal to everyone (both the gluten-free and the gluten-full).

11-23-2008 @12:06PM merrie said... remember that to be diagnosed with celiac you must not alter your eating habits until the tests are run. otherwise you will test negative but still have celiac. as you go gluten free your body starts to heal itself. start with blooed test then get biopsy to confirm. and remember that the cost of eating gluten free products is tax deductable when the items exceed the cost of their gluton containing "brothers", which can be considerable. and quoina is a wonderful substitue product.

In one day, I could tell the difference. In two days, I was off all pain medication. And I lost 24 pounds! So I highly recommend anyone to try it if they have chronic pain. I have another gluten free cookbook by this author and I use it a lot. I came up with my own recipe for a gluten free cake that is better than regular cake! There are still lots of great things to eat that don't have wheat in them but you have to stay alert! It's like any diet. You have to be thinking about it all the time. But it's worth it. I will add this cookbook to my Christmas wish list.
