
Lately, I've been perusing recipes and collecting various instructions for chicken salad. Depending on how much left over meat there is, I like to use leftover meat from roasted chicken to create a salad. I highly suggest tahini chicken salad, Mexican chicken salad, and especially savory and spicy tandoori chicken salad.
What should I do with the left over bones?
Make chicken stock! Place the carcass and the chicken bones in a pot. Cover them in water and let them simmer over the stove for about a half an hour. Epicurious provides a recipe that creates an excellent tasty stock. You can also use the chicken bones and leftover meat to make a rich aromatic chicken soup.
