Tip of the Day: Get the most out of roasted chicken

Do you often make a roasted chicken and have leftovers? One of the best things about roasted chicken is that you do not have to waste any piece of the bird. Find out some quick and easy ways to get the most out of roasted chicken.

Roasted Chicken
Lately, I've been perusing recipes and collecting various instructions for chicken salad. Depending on how much left over meat there is, I like to use leftover meat from roasted chicken to create a salad. I highly suggest tahini chicken salad, Mexican chicken salad, and especially savory and spicy tandoori chicken salad.

What should I do with the left over bones?
Make chicken stock! Place the carcass and the chicken bones in a pot. Cover them in water and let them simmer over the stove for about a half an hour. Epicurious provides a recipe that creates an excellent tasty stock. You can also use the chicken bones and leftover meat to make a rich aromatic chicken soup. Below are a few different chicken soups you can make from your leftover roasted chicken:
  1. Chicken noodle soup
  2. Mexican chicken soup
  3. Chicken soup with wild mushrooms and herbed matzo balls
