Feast Your Eyes: Wheat and oat pancakes

I love a good pancake, especially ones bursting with whole grains (I find that those made with white flour leave me feeling hungry an hour after breakfast). These look like they were excellent, stick-with-you cakes. They also have the benefit of being totally vegan (recipe here), so are fabulous for those mornings when you have a crowd to feed and some of them don't do milk or eggs.

9-29-2008 @1:44PM Ed T said... It's easy to all whole grains to pancake recipes, Just substitute instant* oatmeal for 1/3 of the regular flour or baking mix. Let the batter sit for 15 minutes to hydrate the oat flakes and add extra milk to get the consistency you like.

*Use instant oatmeal -- regular rolled oats are too coarse IMO and ruin the texture of the pancakes.
