Tip of the Day: Chopping chocolate

It may not be difficult chopping up a block of chocolate, but here's a tip to make it that much easier.

A block of chocolate that has been partially cut up on a cutting board.
I'm always amazed at the places you'll find new tips. I was perusing my favorite blogs when I found this one on The Kitchn. It's simple: use a serrated knife to cut chocolate (unlike the one pictured).

If you get a block of chocolate that you need to chop up, using a serrated knife makes the job easier. All the grooves act like so many wedges. Make sure to push straight down, starting at a corner and working longways across the block. If you have such a large block that your knife won't cross the whole block, then work from different corners when you need to.

I know how to cut chocolate properly, but I've always just used a French knife. This is a tip that I'll take back to the kitchen today!
