Tip of the Day: Roast Peppers on the Stove

There are some days when roasted peppers sound so appealing, but it's just too hot to turn on the oven. Don't give up -- just use your stove instead!

Roasting peppers on the stove is a quick and easy alternative to roasting them in the oven. Here's how to do it:

1. Turn a gas stove to medium-high or high. You may want to line the stovetop with aluminum foil before lighting the flame to avoid mess.

2. Place the peppers on the burners.

3. Leave the peppers over the flame, constantly monitoring them. Crackling noises mean that the peppers are roasting.

4. When you see the bottom becoming black and charred, rotate the pepper once with tongs.

5. Use tongs to remove peppers from the heat once they are totally blackened, then seal them in a paper bag for about 15-20 minutes.

6. Remove skin with a knife or your fingers, and your peppers are ready to go!
